What is RevPASH and when is it useful in a restaurant?
RevPASH, revenue per available seat hour, is revenue in a period divided by the number of seats multiplied by the hours open. It shows how well seating capacity is turned into revenue, and highlights quiet and busy times.
Example: 5,000 currency units in a four-hour service with 50 seats gives 5,000 / (50 x 4) = 25 per seat hour.
It matters because seats are a fixed capacity that cannot be stored.
Commonly misread:
- Calculating over the whole day hides peaks and gaps. Use hourly or service-period views.
- Raising it by crowding tables may harm service and repeat visits.
- Ignoring costs. A high-revenue hour with high staffing and ingredient cost may not be the most profitable.
Use it to adjust pricing, menus, bookings and staffing for different periods.
